WAZU is a fusion of a new sensibility and Maruse Sake Brewery's techniques, nurtured in the harsh cold and bountiful blessings of northern Shinano. The wisdom of sake brewing passed down since ancient times and the spirit of innovation that will continue have all come to fruition here.

This low-polished rice, which has a sweet taste derived from glutinous rice that cannot be found anywhere else and which pursues the umami and aroma, retains the earth's energy. This choice, which goes against modern trends, was born from Maruse Sake Brewery and WAZU's unwavering belief in protecting rice's original rich flavour and soul.

The uncompromising attitude of unfiltered, non-pasteurised, undiluted sake and the generosity to accept everything rather than removing the surface of rice too much are from the ideas of ​​coexistence with nature that the Japanese have cherished since ancient times. Maruse Sake Brewery is located in Nakano City, Nagano Prefecture, surrounded by the beautiful nature of northern Shinano. The techniques and spirit of sake brewing passed down since the Edo period live here.
When the harsh cold of winter arrives, the warm breath of the brewers fills the brewery. High-quality sake rice from local contracted farmers and carefully selected glutinous rice used in a fourth-stage mashing brewing process are breathed life by handwork. This traditional brewing method is the pride of this brewery and is the key point to producing deep umami and mellow aroma.

As you step inside the brewery, the scent of cedar and the sweet aroma of fermentation mix together, giving a nostalgic and comfortable feeling. The passion for sake brewing passed down from generation to generation while watching the changing seasons on Mt.Kosha is an uncompromising, sincere attitude towards sake with modern technology. The moment when brewed sake during the cold season arrives in spring, and the smiles of the brewers spread at the brilliant quality of new sake.
