The choice to use low-polished rice was born out of the shared philosophy of Matsui Sake Brewery and WAZU, which values rice's inherent energy and rich character. By maintaining a high polishing ratio, we bring out the complex flavour and deep aroma of the rice, fully expressing the essence of rice grown in the terroir of Kyoto. This sake, bottled as unfiltered, non-pasteurised, undiluted sake, is the culmination of the pride of the craftspeople who do not compromise entirely. Containing the vitality of sake directly rather than removing the surface of rice too much allows you to enjoy the flavour that transitions deepen with time.
