When the skilled techniques nurtured in the snowy land of Akita meet the insatiable quest for innovation, a new horizon of sake is revitalised. This exquisite sake is a fusion of Hinomaru Brewery's inheritance of the blessings of the foothill of Mt. Kurikoma and the borderless sensibility of WAZU. With the philosophy of 'enjoyment for both brewer and customer', this unique flavour from a harmony of tradition and innovation is now calmly knocking on the world's door.
Using the prestigious Kameno-o rice, which has a mark in the history of sake. This precious rice with the hard, opaque white centre of rice called 'shimpaku' has a hidden strength that does not easily reveal its true character. The stubborn uniqueness of Kameno-o, which does not dissolve unless carefully and slowly taken time, is the source of its deep umami and complex aroma. Just like the winter term in Akita waiting for spring, the true essence of this sake emerges only through patient and careful brewing. Using low-polished Kameno-o, we have brought out this special sake rice's full strength and rich character. The choice against the current time is proof of Hinomaru Brewery and WAZU's unwavering belief in pursuing true richness.
The attitude toward unfiltered, non-pasteurised, undiluted sake does not allow any compromise. Containing the vitality of sake directly rather than removing the surface of rice too much, a deep flavour conveys the heavy snow country's severity and tenderness.

Hinomaru Brewery is located in Masuda-cho, Yokote City, Akita Prefecture, wrapped in the foothills of Mt. Kurikoma. In this land during the harsh snowbound winter, the techniques and spirit of sake brewing that have been passed down through the ages continue living.
The clear water of the Omono River has been an integral part of people in this area for centuries. The underground water is rich in minerals and has a gentle softness unique to snowy regions. This blessed water is the source that breathes life into Hinomaru Brewery's sake.
As you walk down this town, you will see the storehouse streetscape that still evokes the atmosphere of the good old days. This architectural beauty, hidden away by a wealthy merchant's mansion that would be difficult to imagine from the main street, is a treasure and pride of Masuda. Similarly, Hinomaru Brewer has continued to pass the batons of skilled techniques inside the traditional storehouse.

The rich nature around the foothills of Mt. Kurikoma, which changes each season, such as wild vegetables in spring, clear streams in summer, autumn leaves, and the harsh, beautiful, snowy scenery of winter, brings excellent blessings to sake brewing. This diverse natural scenery is reflected in the character of the sake, providing you with surprise, joy, and pleasure.
Every drop produced by the brewers' hands is filled with the pride and passion of the Akita region. The wide range of expressions of sake, from zesty to mellow, gives a sense of the energy and resilience of the people of Akita, who have lived with the harshness of nature.
