Using the prestigious Kameno-o rice, which has a mark in the history of sake. This precious rice with the hard, opaque white centre of rice called 'shimpaku' has a hidden strength that does not easily reveal its true character. The stubborn uniqueness of Kameno-o, which does not dissolve unless carefully and slowly taken time, is the source of its deep umami and complex aroma. Just like the winter term in Akita waiting for spring, the true essence of this sake emerges only through patient and careful brewing. Using low-polished Kameno-o, we have brought out this special sake rice's full strength and rich character. The attitude toward unfiltered, non-pasteurised, undiluted sake does not allow any compromise. Containing the vitality of sake directly rather than removing the surface of rice too much, a deep flavour conveys the heavy snow country's severity and tenderness.
